I'm looking for a few pasukim, or mamrey chazal that have to do with the idea of Torah being Emes.
I would appreciate any ideas.

Look at Tehillim י"ט (19)
It has many psukim that say that idea. For example:
תורת ה' תמימה משיבת נפש
עדות ה' נאמנה מחכימת פתי
פיקודי ה' ישרים משמחי לב
מצות ה' ברה מאירת עיניים
משפטי ה' אמת צדקו יחדיו

א - first letter of aleph beis
מ- middle letter of aleph beis
ת - last letter of aleph beis
The Torah is Emes from beginning to end
שקר
אין לו רגלים
ש - ק- ר are all letters can't stand on their own (usually the Shin is pointed at the bottom) The letters of אמת can all stand on their own
