Slice 2 onions into rings and place on bottom of crockpot.
In a large mixing bowl, toss chicken pieces with 1 tbsp olive olive oil, 2 tsp salt. Pour into crockpot, on top of the onion.
Cover and cook on low for 6 hours.
It will look like soup chicken unless you brown the skin first or sprinkle paprika on the skin, but it's delicious.
