which type potatoes are good for chulent?
salad? baby? new? starchy? waxy?
I need for grating to thicken it (dont want potato starch) and actual pieces that shouldnt fall to pieces and become a mush.

Watery potatoes like Idaho and russet get mushy. Waxy potatoes like red or new stay together.
Yukon are kinda in between

I’d use yellow or Yukon and cut half up large chunks and the others half minced for that Cholent texture .
