Babka Dough
1 cup warm water
1/2 cup sugar
1 tbsp active dry yeast
1 tsp vanilla bean paste (or 1 tsp extract 1 Tbsp vanilla sugar)
2 eggs
1 egg yolk
1/2 cup canola oil
4-5 cups high gluten flour
1/2 tsp salt
In a bowl of a stand mixer fitted with a dough hook, gently mix water, sugar and yeast. Let stand several minutes until the yeast poofs and looks foamy.
Add vanilla, eggs, oil, 4 cups flour, and salt.
Knead on low speed, gradually increasing to medium into a smooth dough forms. It should retain a slight stickiness. If needed, add flour, 1 tbsp at a time, until it no longer sticks to the side of the bowl.
Once the dough comes together, stop kneading and allow it to rest for 3-4 minutes. This will help you gauge if you need more flour.
Divide the dough into 2 or 3 (1 pound) portions and place in Ziploc bags, removing air from the bags as you seal them.
Let dough rise in the fridge for up to 24 hours, or freeze before rising. To defrost, transfer bag to fridge for about 6 hours. Alternatively, defrost at room temp about halfway for 2 hours, and then transfer to the fridge to finish defrosting.
Chocolate Filling
2 cups cocoa
2 cups confectionars sugar
4 cups sugar
1 (3.8 oz) pkg instant chocolate pudding powder
4 tbsp vanilla sugar
1/4 cup oil
1/4 - 1/2 cup boiling water
Dry Filling: In a bowl, mix together cocoa, sugars, and powdered pudding. Store in a Ziploc bag or container.
Wet Filling: In a bowl, combine 2 cups dry filling with oil and 1/4 cup boiling water. Add up to an additional 1/4 cup boiling water as needed. Use right away, as the filling thickens as it sits.
Crumble Topping
1 cup confectionars sugar or regular sugar
1 cup all purpose flour
1 tbsp vanilla sugar
6-8 tbsp oil
In a bowl, combine ingredients with your hands until the mixture feels like wet sand.

Roll dough into a long thin rectangle. Spread dough with wet filling. Sprinkle with crumbs. Top with dry filling.
Roll into a tight log, pulling back and tucking in as you go to ensure that the log holds its shape and the fillings stay inside. Stretch as necessary to lengthen.
Cut log in half to create 2 ropes. Cut each rope to make 2 more. Place 2 ropes side by side and make a cut down the center of each one, making sure not to cut all the way through. Twist the 2 halves of the rope together. (ETA: It seems the first two slit ropes are twisted together. Then the next 2 are twisted together. Then the two sets of double twisted ropes are then twisted together to form the babka loaf)
Or just shape the 1 long rope into an N.
Sprinkle with crumbs. Cover and let rise 30 minutes.
Place into a parchment lined metal loaf pan.
Bake in oven preheated to 350 for 30 minutes. Rotate the pans and bake an additional 15-20 minutes until golden and tops are firm to the touch. Allow to cool completely before slicing.
