I make a meat with mushrooms for Fri night and then heat up the extra meat and mushrooms on Shabbos day. Toss that with lettuce, any salad dressing, onion bissli and sometimes deli too (sauteed deli is yummm). You could add other veggies if you like as well. I'm a very picky eater unfortunately, so this is a great and delicious way for me to get a lot of non-dairy protein.

This is the salad I usually make for Shabbos day:

Romaine lettuce ripped into pieces
Grape tomatoes cut in half
2 kirbies sliced thinly
Turkey pastrami, brisket pastrami and beef salami, a few slices of each cut into thin ribbons
Or purchase ends of the cold cut rolls and chop into diced size pieces
Craisins
Onion garlic or Caesar croutons

Dressing:
1/4 cup to 1/2 cup mayo
Splash white vinegar
Tsp honey
Tsp sugar
Salt to taste
Black ground pepper
Squirt of mustard
1 frozen cube crushed garlic
About tbsp water
Shake all ingredients well in a container. Pour over salad and mix right before the meal

Other option: use left over chicken cutlets from Friday night.Slice very thinly instead of cold cuts and Replace craisins with sliced avocado.
