the shul has 2 large roaster for crock pots.
can someone help me calculate how much of the ingredients to make enough hamin for 80-90 ppl?
most recipes for hamin are for 8 ppl, using about 2 lbs. of meat, plus bones. Our budget doesn't permit for 20 lbs.... lately, I've been making cholent, but its too heavy on the barley. I want to make d'fina but my recipe is largely chickpeas & lamb.
I need help with getting a good balance for the huge Ashkenazi crowd.

We make dafina with "chulent meat", a big chunk of cheap tough meat. I don't know what to call it, it's just labelled chulent meat where I buy it.
I use the same size for both chulent or dafina (I make either, depends on my mood).
Use 1-2 potatoes per person, depends on size. I've neverr measured other ingredients, sorry.
You can make chulent without barley, btw.
