Half moon avacados with half moon slices of purple onion..
Half of an avacado for half of an onion
Paprika, salt, pepper
Oil
Then start again
Row of avacado, onion spices, oil, etc.
Over and over until you have enough
Mix everything together
It's good

1 pickle
2 slices onion
1 bell pepper
1 tomato
lettuce
Dice and place in salad bowl.

Dressing: dash olive oil. Dash lemon juice. dash salt. dash sugar, dash pepper, dash garlic powder.

Always comes out a little bit different and always good

1 leek (thinly sliced)
10 cherry tomatoes (quartered)
3 mushrooms (peeled and thinly sliced)
can of baby corn ( cut into thicker slices)

dressing:
1 cup mayo
1/4 cup vinegar
1/3 cup water
1 tsp garlic powder
1 Tbsp. sugar
salt and pepper to taste
(Keep on tasting to see if u like it sweeter or not...)

It´s a yummy salad and I love this thread!!! Very Happy

Been making this for lunch lately:
Lettuce
Onion
Cucumber
Tomato
Chick peas
Dressing is
Salsa
Mayo
Salt, pepper, garlic powder
As an extra I add nish nosh crackers (sour cream and onion flavor)
Yummy and so filling

It's not an office recipe, but...

Romaine lettuce
1 regular tomato or a few grape ones
1 red pepper, 1 green pepper
1 cup feta cheese
1 red onion
1 cup pitted black olives
olive oil, oregano, pepper to taste
if you want, you can add a thick dressing...
Add more or less however much of each product for the amount of people and to your liking

Jicama or Kohlrabi Waldorf salad
Jicama or Kohlrabi cut into cube
Celery sliced thinly in the food processor
Cashews
Mayo,Lemon juice, Salt, Pepper, Sweetener
---------------------------------------------
Roasted Eggplant
Chinese Eggplant
Garlic
Salt
Parsley
Olive oil
Cut chinese eggplant into 1" rounds and place on a parchment paper lined baking sheet. Bake until golden (this may take a long time). When done mix with fresh garlic, salt, parsley, olive oil to taste.

Chickpeas
Red,yellow,green peppers very thinly sliced
Red onion very thinly sliced
Radish thinly sliced in the food processor
Garlic, Salt, Pepper, Olive oil to taste
---------------------------------------------------
Chumus
Chickpeas
Garlic
Salt
2TBSP olive oil
Blend in food processor until smooth
-------------------------------------------------
Tapanad
Black olives
Garlic
Salt if needed
Mayo
Process in food processor until desired consistency

I also make roasted beets, Moroccan carrots, Israeli salad ( peppers, tomato, cucumber, red onion,lemon juice, jalapeño,olive oil salt.

For RH I omit the spicy ingredients

Marinated Zucchini Salad

1 lb zucchini, unpeeled
1 medium sweet onion, sliced thinly
1 medium orange bell pepper, sliced
1/2 cup apple cider vinegar
1/3 cup water
1 Tblsp oil
1/2 cup sugar
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp dried tarragon or marjoram, crushed
12 cups salad greens
3 Tblsp pine nuts (optional)

In a quart sized container with lid, combine vinegar, water, oil, sugar, and spices.

Cut zucchini in half lengthwise (if large, cut into quarters) then cut into 1/8 inch slices. Combine with onion and pepper in the dressing. Marinate overnight. Toss occasionally to make sure veggies are well coated.

When ready to serve, spoon veggies over salad greens with slotted spoon. Add pine nuts and toss.

Modifications:
I find 1/2 cup vinegar to be too overpowering, so I decrease it to 1/3 cup.
A whole onion is way too much. I use half a white onion.
I increase the salt to 1 tsp.
You can use any colorful pepper except green if you can't find orange ones (or if they're really expensive).

This is a great salad to serve to company because all the chopping work is done in advance. The marinated veggies keep for a couple of days in the fridge. And the leftovers are great with a can of tuna added (no mayo).

1 head of red cabbage.....sliced thinly, 1/2 cup of mayo couple of tablespoons of lemon juice salt pepper and tumeric.

romaine lettuce, cucumbers, chick peas, peppers (any color) hearts of palm, avocado, scallions and chinese noodles. dressing is (I dont know eact measurements) olive oil, soy sauce, sesame oil, 1 clove fresh garlic and 2-3 tablespoons of lemon juice) sometimes I add grilled chicken on top

My own creation but love it.

Thinly sliced red pepper, yellow pepper, eggplant and onions
olive oil, salt and basil
Mix well and lay on flat baking sheet. Bake on 500 till well roasted, keep tossing.
Yum!
