The lawyer tells me he's bringing me a Chanukah gift so I guess I have to return the favor.
I know he likes fruit salad and granola bars, so I'm going to wrap them up, one on top of another...but what should I top it with?
A muffin? a bow? a lottery ticket?

Put a bottle of flavored water & tie a ribbon to tie it all together.

Bosses are the ones who are supposed to give the "holiday"/ appreciations gifts. The secretaries, ect. are not supposed to buy the bosses gifts.
If you do decide to give something though, I don't think a salad a granola bar are going to cut it.

A lottery ticket is a cute idea! But wouldn't you kick yourself if it was a winning one?!

Since he's bringing me something, I feel I have to bring him something, albiet smaller.
I thought a "breakfast" theme was nice....

I didn't realize it was a boss. A theme doesn't really work, IMO. You need a gift.
