“Shrimp” with pesto
From Fitness magazine
Defrosted mock shrimp
Bunch parsley
Garlic clove
Salt and pepper to taste
1/3 cup oil plus 2 T
Make your pesto with the parsley, garlic and pepper. Add the oil and salt and process until smooth. Sautee your fish in oil until “done” (the Kosher mock shrimp is fully cooked) and then add your pesto until well combined. Serve at room temperature.
