"Shrimp" Ratatoulle
from Family circle, I think

olive oil
onion, sliced
3 cloves garlic, minced
1 eggplant, cubed
2 zucchinis, cubed
2 cut up peppers, any kind
box of mushrooms (disclaimer: I had no zucchini nor eggplant and it was just fine)
can chopped tomatoes or tomato sauce; 14 oz or 28 oz; depending on how many veggie syou are using
cup green olives, optional
salt and pepper to taste
lb defrosted fake shrimp
fresh herbs to taste
handful of nuts, toasted if possible

You sautee the onion and then add your other veggies. Let cook about 5 minutes and add the sauce and spices. After about 20 minutes, add your fish. Serve hot or cold, with the nuts on top.

Both. Hot by night and cold by day. I made a big pot full, so dd can take the leftovers to work for lunch next week.

I miss real shrimp. I like the fake stuff too though. I just thought I would tell you that I miss real shrimp as well. squid too. and lobster. but I don't eat them anymore.
