My husband and I are thinking about getting a portable dvd player for those trips, next one coming up on Sukkos, so we will see how much it helps.

mini etch a sketch, mini magna doodle, a clip board to keep the papers from falling and on a hard surface (easier to work/color etc...) plain paper and lined paper (for the 12 year old to use for a journal and write down exciting things about the trip)
There is also a great coloring book of optical illusions and geometrical shapes that will keep them busy for a long time. It can be found at: www.raisingsmallsouls.com/coloring.html
I found that it really keeps my kids entertained for hours.

oh I love this...

Go to a store like staples or another cheap place

Get index cards (they sometimes come grouped together bound)..

Put pictures of different things, and it's l ike an I Spy game..

Bird, Tree, plane, book, boat, water...cloud...etc etc..

You cannot give it to them until they start whining though, or they get bored quickly

Play the abc game. Remember Madlibs? still work great. Save the meal time for the car, but always take the first few sips from any juice box.Buy a new cd or 2.Maybe a cd player for the 12 yr old who may want diff music.Books that the older 2 may be willing to read to the 3 yr old. Travel games for the older 2.Or cards.

What time are you leaving? When we used to do 8-10 hr drives we would leave 4 or 5pm. this way the kids would have some daylight time. then eat supper, play by flashlight for a bit , depending on time of year, then sleep. We would get inby 2am so we wouldn't be totaly exhausted as we would have been if we drove through the night.
Have a safe trip.
