Jambalaya
a la Family Circle
oil, any kind
1 lb chicken breasts, cut up
12 oz sausages, smoked or Italian; cut up like coins
1 onion, cut up
pepper, any color, cut up
celery rib, cut up
Cajun seasoning (I used cumin)
14 oz diced tomatoes with chiles (I used plain tomato sauce)
rice
Heat oil and saute your onion. Add the chicken, sausages, and the vegetables. Cook a few minutes, than add your sauce and spice. Cook about 20 more minutes, then serve with rice.

You could actually omit the cumin, stick in some basil and oregano, and mix with pasta...it will be a really hearty, quick meal.
