Pickled roast just needs to be cooked. The pickling gives it the flavor (kind of like cold cuts.)
To send it in MM: once the roast has been refrigerated and is really cold, slice it neatly. Lay it on a pretty platter. You can place some bay leaves around the platter to give it some color. Use Saran wrap to wrap it neatly, kind of like shrink wrap. You can tie a ribbon around the whole platter. Or not. And send the sauce (water roast was cooked in) in a pretty glass jar alongside it.
If you want, you can make a cranberry sauce of some sort to drizzle on top when serving. Also send that in a pretty jar.

Place the roast in a size appropriate pot. Add water to almost, but not quite, cover. You can add garlic cloves and bay leaves, but you don't have to.
You can cook a 3 lb. roast for about 1 hour. Slice when cold. Reheat in pot juices.
If serving right away, cook for longer than an hour.
