1 hr and a half do last 15 minutes uncovered save some of the mixture and baste it so it crisps nicely

always use spices, garlic powder, black pepper and the like - so that your chicken/turkey doesn't taste dead

chicken is dead.
(or at least I hope it would be) 
Try adding paprika. it gives color so the chicken doesnt look anemic
