Yesterday: cheese dumplings, corn on the cob and cucumber slices
Today: fried flounder, home fried potatoes and creamed spinach
Tomorrow: spaghetti with grated cheese, pepper strips
Thursday: eggplant parmesan with ???
Sunday: macaroni and cheese, probably. Some sort of vegetable
Pre-fast: Vegetable-barley soup, fresh bread, maybe lukshen-cheese kugel. If not, something else.

You are all eating so much cheese and we don't eat dairy almost. and I don't eat fish other than lox. He eats some fish.
And dh doesn't eat egplant, tomatoes, olives or any cooked veg except fried peppers, onions, mushrooms or sweet potato and regular potato.

So last night I made fried peppers and onions and eggs. Tonight he had salmon and I had some lettuce, potatoes, lox and sweet potatoes and eggplant.

Tomorrow? Who knows. this is torture. We usually have chilcken from shabbos every night. Maybe I wil ltry to make latkes. That's a good idea.

anyone have a good cream of something soup or broccoli soup (no potatoes)? My cookbooks are packed cause I'm moving in a few weeks, but I really want to make some soup. THanks!

The pupa cookbook has a very good broccoli soup. Don't have it with me. Maybe someone can post it. Potatoes are optional.

Yes I always did it with ready sauces. Itll be delicious as well. However once you try your own sauce, youll see a difference.

I was in a rush yesterday so I sort of cheated with my cream of broc soup but it was actually realllly good

just took some frozen broc and cauliflower and cooked it in water with some salt and pepper (about halfway to 3/4 filled with water) once it was cooked I added some milk and then pureed everything with a hand blender - if its a little thick add more liquid. I then topped eah hot bowl with mozz cheese

Any ideas for DH who doesn't touch cheese and we can't afford salmon which is the only fish we like besides tuna.

Monday: Tuna noodle casserole which is great, I spiked the cheese
Tuesday: butternut squash soup with latkes
Tomorrow: ???

It IS very challenging.
I do a oven baked vegetable frittata, similar egg roulade, quinoa bean salad, french omelettes, french toast, parve pancakes, etc.

I rinsed and briefly soaked and re-rinsed a bag of dried mixed beans, put them into the smart-pot slow-cooker on my way out of the house with water, and came back to cooked beans, without heating the kitchen. Drained and cooled, they came in handy, eaten with oil and vinegar. That machine is not just for cholent, and not just for winter.

The beans could go into gazpacho, cold salsa soup, maybe, with a little hot sauce and a hardboiled egg.

mon- sticky tilapia nuggets(from sarah lankrys cookbook), broccoli quish,sticky brown rice(from here) bissli salad(from here), low-fat cheesecake(bina and didnt like it)
tues- broiled salmon, sticky brown rice(left overs), corn and ceasar salad, and swiaa moca muffins(bina)
wed.- eggplant parm, mashed potatoes,stir-fry veg.
thurs-pizza and fries(homeade)
next week will try salmon spinach wellington from one of the magazines and will try a parsnip soup from one of the dining ins

I have to admit that I also made a menu, but very simple things....however, Let's keep in mind that the 9days is supposed to be a time of availus and that is why we don't eat meat. I don't think making fancy gourmet, patchky meals is what rabbanim had in mind when they made these takanos. Let's keep the focus in the right place Smile

You should ask a shaila, especially if those with special dietary needs are children and/or sick. Especially this week there are leniencies.

One child can't have dairy or fish, but he gets most of his nutrition from formula so balanced meals one week aren't a huge issue, dh can't have dairy and another child (over bas mitzvah) can't have soy. All in all, I can cook multiple meals and feed everyone, but it is a pain. We only do fish if my son isn't home since he is allergic to it touching him or the smell of it cooking as well as eating it, so fish is pretty much out for us all.

I'm looking for a creamy sweet butternut squash soup. Do u make that? N if so can I have the recipe.

I saw the following recipe on here yesterday, can't find it now tho.
mix mayo, dill, lemon juice. combine with tuna. lay out puff pastry dough, and put tuna ontop. fold puff pastry dough over the tuna. and bake till light brown.
I'm pretty sure this is the recipe you can do it with canned salmon too.

Sunday night -- baked ziti
Monday night -- eggs (don't ask; I was doing some major shopping, totally forgetting my husband had night seder shortly after I came home! He ended up warming up leftover potato kugel)
Tuesday night -- chicken, corn beef, turkey salad, potato salad, coleslaw, etc (siyum)
Wednesday night -- tuna burgers and mac and cheese
Thursday night -- fishsticks and rice casserole
Sunday night -- tuna casserole
Monday -- TBD (prob salmon, potatoes, etc -- whatever I feel is appropriate pre-fast)
