It's delicious and yummy with a nice crunch.

What's Avo? And can you give me an idea of amounts of rice, lettuce, etc. for that amount of dressing, please?

It's similar to doughless potato knishes. cook potatoes in the peel. peel and mash potatoes. Then mix fried onions and the oil from the fried onions into the mashed potatoes. add eggs salt pepper and a little flour. put large spoonfulls onto a generously greased pan and bake. It's yum!

the only way I have success popping rice is if I use uncle bens converted rich (the original one) and the oil must be very very hot otherwise you will just burn the rice and it wont pop properly.

I would assume avo is avocado as you said

I use diff salad ingredients and a diff dressing for my popped rice salad which e/o always loves so here it is:

1 bag sliced green cabbage
1 can hearts of palm
1 can of baby corn
3 scallions sliced

1/2 cup uncle bens converted rice

dressing:
1/2 cup mayo
1/4 cup brown sugar
1 tsp balsamic vinegar
1 tsp rice vinegar
1 tsp red wine vinegar
1 tsp white vinegar

in a small pot put 1/2 cup of oil and let it get really hot then drop in the rice and let it pop watch it carefully it happens really fast and can burn.
drain the oil and let the rice dry on a paper towel

Okay, as someone said it's the Uncle Ben's original (I don't live in the US, so I use a weird rice, but in the US I find the Uncle Ben's works the best-it's the orange box).
Heat oil in pan till very hot, and put the rice in. It should start getting white and puffy immediately. If not, the oil isn't heated enough or there isn't enough oil. Also stir it with a spatula the whole time. It shouldn't take more than a few minutes.
Avo is avocado.

I use let's say one head of iceberg lettuce or more, most of an english cucumber, most of a purple onion- but I like my salads very oniony. And 2 avocados. It should be pretty dressingy. Often I have enough dressing for friday night and shabbos day. Depending.

Oh, just saw this. I use much less oil than that usually, and I do it in a frying pan.

Pita and humous
pumpkin soup
chicken won ton
chicken pot pie (this is a leftover)
make your own green salad bar
corn salad

Saturday:
cholent and leftovers

I may or may not get around to making a dessert. It is looking like a no.

Making my first Shabbos in quite a while!!!
Well, only Friday night.

Challah and salads
Moroccan salmon
Chicken soup
Mishie's stovetop chicken with a yet-to-be-determined rice
Quinoa pilaf with almonds and craisins
Guest is bringing a sweet potato/avocado/fried rice vermicelli salad, and peanut chews
Cake/Ice cream

Sorry, I haven't check the thread in a while. The soup came out really well. I use actual pumpkins , but I am sure you can use something canned.

Pumpkin Soup:
2 mini pumpkins
5 cups of stock (vegetable or chicken)
1tbs maple syrup
1tbs honey

Peel and cube the pumpkins. Put them in a pot with the stock and simmer until the pumpkin is soft. (About an hour on my stove). Add the honey and syrup and blend with an immersion blender.

That's it. It's really simple.

not sure if or what we'll have for dessert..

I went a little overboard this week as its just DH and I so far..
