Very easy and not so fattening:
Layer in a 8x8 pan (or double in a 9x13 pan)
cornflake crumbs or bread crumbs or matzah meal
peeled eggplant sliced thinly
cornflake crumbs or...
pizza sauce
shredded cheese.
repeat until all the eggplant is used up (about 3 layers).
Finish with eggplant covered in cornflake crumbs.
Bake tightly covered for 1 1/4 hours.
Uncover and pour ontop
8 oz. tomato sacue
2 tbsp. oil
1/3 cup sugar
mixed together.

Bake 15 minutes uncovered at 400.

This is my recipe:

I make a delicious semi-dietetic recipe for eggplant parm.

2 medium-small sized eggplants
eggs
flavored breadcrumbs
12-16 oz. shredded cheese
marinara sauce

peel and slice eggplant, either way, in length or in circles. Egg and bread them. Spray a few cookie sheets and layer the slices that there should be no open spaces left on the bottom of the sheet, pieces can and should overlap a bit. Spray again on top. Put into a 400 degree oven for about 20-25 minutes, or until lightly brown, NOT CRISPY, just cooked. Wait till slightly cool, so you don't burn your fingers (as I have done multiple times when in a rush). In a 9x13 pan layer one of eggplant, again with no pan showing thru, overlap or tear pieces to make it work. Pour about 1/4 to 1/3 of the jar marinara sauce over the layer and spoon smooth. Then sprinkle a layer or either the cheapest or lowest fat shredded cheese. If I buy two packages of 8 oz. cheese, I try to buy two types like cheddar and mozzarella, or muester etc.. keep layering until you run out of ingredients. Make sure to have the cheese as the top layer. Bake uncovered in a 400 degree oven for about 45 min- 1 hour or until the cheese is bubbly and brown.

It is delicious. I used to serve this with homemade french fries and salad, but it is a bit heavy and it is so good, that I would rather just serve more with just salad or something. YUMMMM!!!

(canned) salmon quiche
soft veggie tacos (dd made fried onions, garlic, zucchini, w/canned corn & black beans - on a pita with matbucha and sour cream. yummmmm)

Wednesday:
Lunch -
Bean burrito
Dinner-
Vegetable lasagna (with broccoli, zucchini, mushrooms)

Thursday:
Lunch-
salad and bean burger
Dinner-
Leftover lasagna

I'm not quite sure I understand what the Rabbi said. Aren't we mourning the lack of korbanos? If not, why do we choose the 9 Days to remember that we have no korbanos and not any random week of the year?

Started Monday night-

1. stuffed shells, creamy zuchini soup
2. Eggplant parm, leftover soup
3. Leftover eggplant parm, corn on the cob
4. Home made pizza, fresh salad
5. Tuna quiche, french onion soup, veggie of some sort
6. Lasagna, Greek salad
7. Leftover lasagna, fresh salad
8. Pre-fast, fresh fish of some sort (haven't decided yet), Persian rice, fresh salad

This is what I made so far or plan on making:

Homemade pizza, one topped with tomatoes, olives, green peppers, onions, eggplant, and reg cheese, one topped with tomato, onion, olives, bulgarian cheese, zaatar

Lentil walnut burgers, served on buns with lettuce, tomatoes, and condiments. Homemade custard. (This was today's menu.)

Miso soup with rice noodles and seaweed

Szechuan eggplant tofu stir fry with rice (tomorrow's menu)

Fish n chips

Vegetarian beefaroni

ra-mom I just love reading your menus, they are so my style. I'm just not organized enough usually to post what I'm cooking ahead of time.Also, now since I'm dieting bigtime, I spend more time on excercize & less on cooking / eating.

Today I went out with a friend for lunch & had fish & grilled vegetables so I'm not really in the mood of major cooking. I think it'll be a salad topped w/ cubes of grilled salmon. I could use a good recipe for a dressing though.

Wednesday: Vegetable soup and Fully loaded Tuna Sandwiches
Thursday: Baked Ziti and Israeli Salad
Sunday: French Onion Soup, Tuna Patties, Rice with Sauteed Veggies and Green Beans (Rice and green beans are from Shabbos)
Monday: Lentil Soup, Fried Flounder, Pasta and Broccoli
Tuesday: Lasagna and Salad
Wednesday: Butternut Squash Soup, Salmon, Mashed Potatoes and Spinach-something-or-other
Thursday: (to break the fast) Soup (whatever one I'll have extra of from during the week), Bread, Omelettes, Cake

Salmon with a sauce made from chile sauce, marmalade, soy sauce and then broiled

sauteed sugar snap peas with a little fresh mint and grated orange rind.

tonight was baked breaded flounder, french fries and yummy broccoli kugel. tomorrow is teryaki salmon (from mikees sauce) with homemade lo mein/linguini. tuesday is eggplant parm from freezer and a salad, maybe pot blintzes too. have to think about before the past what to serve

Sorry if I'm too late - but I'll post it anyways. It is very easy.

4 fillets of tilapia (I used frozen)

1/2 cup Duck Sauce
1 Tbsp mustard
paprkia, for color

sesame seeds (optional)

Mix sauce. Pour over tilapia. Sprinkle with sesame seeds if using. Bake covered for 20 minutes. Broil for 10 minutes or until golden brown.

It is easy and good. My dh really doesn't like fish much but he liked these

I'm a big fan of the kosher japanese cookbook, and we don't eat much dairy here. I'm making tilapia steamed in wine, stir fry tofu, egg fu yung, and grilled (we're baking it) salmon with limes from the cookbook. (The recipes are very simple and easy.)
