Which recipe(s) for all Whole Spelt Flour do those who use all Whole Spelt, make the best fluffy Challah?

Cousin Ahuva’s Spectacular Spelt Challah
• 4 tbsp yeast
• 2 cups warm water
• a bit of honey.
• let it dissolve and set aside
Get a second bowl…
• 2 cups water
• 3/4 cup honey or agave nectar - I started using agave nectar - low on the glicymic index and also makes a silkier dough!
• 6 eggs
• 1/2 cup oil
• 2 tbsp. salt
• 1 cup flax meal - opt. but great for fiber
Now add yeast mixture and then add the flour - 5 lbs. white spelt plus a bit more.
knead and let it rise at least 1 hour.
Shape and let rise 1/2 hour and bake at 350 for 1/2 hour! |
A few questions here.
If anyone can respond, I'd be really grateful.

1) Can this recipe be halved?
2) Can I use only White Spelt Flour?
3) Can I use Instant Dry Yeast?

Please go to chezchaya.com. She has the best recipe! I use her recipe with 6 lbs white spelt flour and it's delicious! (I use fresh yeast but her recipe calls for dry yeast.) It's the best challah around

Are you referring to this recipe?
Best Ever Challah (Egg-free)
Ingredients
3 cups water
2 cups seltzer
1¼ cups sugar
1/2 cup honey
4 tablespoons active dry yeast (5 full packets)
5 pounds bread, sifted, or all-purpose unbleached flour
1¼ cups oil
1½ tablespoons table salt, 2 1/2 TBS sea salt, or 2 tablespoons kosher salt, or 1 tablespoon himalayan pink salt
1 egg, 1 Tsp water, beaten with a tiny bit of sugar for brushing
* For egg free shine, use maple syrup.
