Why can't your place take in 2 more children and for that price hire a cleaning lady to do the diapers etc.
You shouldn't be doing all of this alone.
You don't have to leave childcare. You just have to find a place where you can continue doing the things that you love about it and leave the rest to someone else.

OP this is the life of people who work in childcare. It's exhausting and draining and sometimes disgusting. The little faces tug at our hearts and give us more energy but when the day is done, so are we.
Never a sub, never a break. Our own children see us at our worst at the end of the day.

OP, you need to switch to a different field.
Totally different.
I work in health care and can totally relate. Years ago, a colleague of mine comitted suicide because of burnout.
Years ago, I left a job I hated and found a different one that suits me much better.
Was I afraid they'd call me ungrateful and a deserter from duty? Yes. Did they? No, or at least I didn't hear of it. Last I heard was that their departmet is thriving without me. And I'm thriving without them.
The world will not collapse if you leave your present place of work. They'll manage just fine. They'll find a solution. You don't have to sacrifice your life and happiness. They'll carry on (and forget you ever existed a few years from now).
Switch to something different. There are a million ways of earning an income in the world. Make it your personal top priority to find a way that suits you. There must be one or more. Put in thought, planning and effort. Manage your life, don't be a slave.
To quote a joke from a medical website: "Since I've quit the hospital and started doing night shifts at the gas station, I've learned to smile again."
Find a different job/field. Not a gas station, of course
