I used to do all these tricks and they are hit or miss. The only fool proof method for me is adding baking powder. Even on pesach, using shmurah matzoh meal,I had perfect, light and fluffy kneidlach.

I leave the in the pot after turning of the heat. It makes the knaifelach softer. For fluffier, I add mix in baking powder just before cooking. Try the recipe from serious eats online.

cooking it with lid covered completely on low - cooks very fast.
is that ok?

Yes! That's what I use. Except I add the baking powder just before boiling. I feel like it works better that way.
