A grandfather/ great grandfather can’t be sandek more then once? Is this brought down somewhere?

No. More than once for the same family. Not for two siblings

It doesn’t have to be your Rav. We asked a family members Rav after both grandfathers and our Rav had already been sandek for us and if that didn’t work out we were going to have someone ask a local Rosh Yeshiva who knows who we are but we aren’t close with.
Dh is also an option, was very common during Covid.
