Thanks for all the great replies! Looks like I will throw it in the freezer (didn't realize that was an option) and eventually make something with it sauteed. Yum!

Here's my egg roll recipe for whoever wanted:
Ingredients:
1 lb. shredded cabbage
oil
3 tsp. sugar
2 tsp. salt
1-2 tsp. soy sauce
1/8 tsp. ginger
1/8 tsp. black pepper
8 oz. deli pastrami, chopped or shredded
Directions :
Saute the chopped cabbage in a small amount of vegetable oil, till limp. Add all of the other ingredients and cook for 3 more minutes.
Set aside.
When cabbage mixture is cool enough to handle, stuff and cook egg rolls according to the package directions.
