Thanks everyone for these helpful responses. I’m going to try giving my son a simpler dinner/freezing more dinners and getting him in bed earlier, like 7:15. We got into a late schedule this summer with camp, vacations etc.
I also somehow need to take care of myself more. It’s hard to prioritize it.

I have multiple kids and do bedtime alone most nights because of work (including motz”sh!). Even when he comes earlier he goes to learn so I’m still on my own. My kids are very very difficult. It’s very hard. This is why once a week we go out and let a babysitter do bedtime - which for some reason works like magic, she has them in easily and I get a break for my sanity. If you could afford it I highly recommend it. At least once a week. Hatzlacha

What does your husband do to help besides for working?
Why can't you get more time for yourself on Sundays? That should be non negotiable if he doesn't work on Sunday.
It is hard. Especially when you have little ones and are nursing. But stay positive it really does go by fast. The 3 year old will be much more independent in a year or two. You can start teaching him things to make your life easier...like putting his laundry in the hamper, getting his own pajamas out, taking off his clothing etc...
