1/2 box puff pastry
1 small onion
2 T canola oil
2 T margarine
2 stalks celery
1 box frozen vegetables, mix of peas and carrots
2 T flour
1 c chicken stock
1/4 c soy milk
2 boneless, skinless chicken breast (cutlets)
salt and black pepper
I don't feel like typing up the instructions and since it sounds like you've made it before, you probably know them. If not, let me know.

preheat oven to 400.
1 puff pastry makes 4 individual ones, so cover with a kitchen towel for 20 minutes to thaw as many as you need.
sautee chopped onions, chopped celery, and peas and carrots for about 4-5 minutes.
sprinkle flour and mix. add stock or milk and cook until thick, about 5 minutes.
add cubed chicken and season with salt and pepper.
ladle the mixture into 4 individual oven-safe ramekins.
cut the puff pastry into 4 squares and roll into 6" square.
cover each ramekin with the pastry, tucking it over the edge to keep it secured. with leftover dough, cut decorations and place on top of pie.
place on cookie sheet and bake for 25 minutes, until golden brown and filling is bubbly.

Would this recipe work with cubes of cooked chicken from the Shabbos chicken soup?

when I used to make it, I used the premade and precut Yitzy's squares. I think I used the large size. it's a very good receipe and just thinking about it makes me hungry!!!

If you don't want to use soy milk, you can just use another 1/4 cup of broth.
But just letting you know that the soy milk makes it nice and creamy.
