If he likes wine there are lots of great Kosher ones on the market (my DH & SIL's discuss & buy good stuff all the time.) Then you can buy that fancy "rabbit" corkscrew (it comes in a nice gift box.) Bed Bath & Beyond sell them, or you can Google it & get it on line.

I know we're buying my father a menora for his 60th because he's always wanted a nicer one. Is there anything that he's always wanted in the back of his mind? A piece of silver or the like?

My DH turned 60 this summer and his gift was a family reunion -- gathering almost all of his children and grandchildren (it's quite a large group) from around the world. There's nothing he would have liked better (and he even wound up paying for some of the tickets for couples who otherwise couldn't have come -- and was thrilled to do so). We had a Shabbos together and a picnic on Sunday. The kids put together a booklet with poems, pictures, etc. that was presented to him (the original) with copies to everyone. One daughter wrote a long grammen that was sung at the picnic. I don't think there is any gift he would've liked better.

My grandmother did s/t in the same vein for my grandfather's 70th b-day- we all went out to a hotel for shabbos- it was really a special experience! The boys made chiors. All the men prepared dvar torah's/speeches... The woman put together a scrapbook. His kids bought a new silver menorah since it was shabbos chanuka (& it was my grandparents who paid for the weekend...)

I personally think that most parents appreciate s/t in this affect rather than a gift - & of course if you are spending $ on a get together... then you are not expected to buy a gift in addition to that... but I do suggest doing s/t w/ pictures - ex: photobook, scrapbook, digital frame...

you can buy an album and ask your siblings to send recent pictures ( and some old) of them and kids - if have. and give album to father.
