Moosewood Restaurant Cooks at Home - all but one recipe is kosher-friendly, and the recipes are all fast and easy.

Me too.
Their huge cookbook isn't too good, but the baking one is great.
They also put out Annual Recipes books for all their magazines, and those are a nice mix.
I loved their magazines, although now they're getting fancier, which I don't like.
They also have tons of recipes on their site www.tasteofhome.com

The original Moosewood cookbook is older, and I find the recipes take forever.
Moosewood Restaurant Cooks At Home is just fast and easy recipes, no fuss.
