Vegan Cupcakes Take Over the World
I am not even kidding. Vegans don't eat any animal products, so this is a cookbook of dozens of yummy, parve cakes.
Vegetarian Cooking for Everyone, by Deborah Madison
This is awesome even if you aren't vegetarian; it has recipes for any vegetable, bean or grain side dish you coule imagine, plus deserts and fruit dishes.

Every single thing I make from there is no-flop and delicious, my own trimmed-down versions included

I love "The Heimishe Kitchen - A Yiddishe Simcha - Volume III".
The recipes in it are fantastic. the first 70 pages are menus and recipes for 60+ people. but don't let that put you off. The rest is filled with fantastic, practical, and easy recipes.
I use it a lot.
for practical milchig and chicken suppers, or traditional side dishes and salads it is my go to cookbook
