Which soups are good with melted cheese on top?

We usually have the same couple over during Chanukah for soem casual socializing. It isn't dinner so I serve snacks like decorated dreidle cookies, latkes and sometimes soufganiot. This year one attendee is on a low-carb diet. I want to make something everyone can eat and soup sounded good to me. Being able to add shreadded cheese to the top makes it more Chanukah-dik and special. I don't have a milchig pot so I can't make a milchig soup btu I could make a pareve one and let everyone add their own cheese. Any ideas of what to make. Please include recipes and remember only no-carb ingredients.

The best is onion soup. I can't get a recipe now b/c nak.

You can also add cream / milk to lots of blended soups... tomato / carrot / orange / etc.

Try french onion soup (perfect for melted cheese) or any "cream of" soup, like mushroom, asparagus, etc. (use non dairy creamer instead of milk for cooking in parev pot. I don't have recipes, but I'm sure there are gazillions online - they're pretty basic. Now I'm hungry!! Wink

Note: tomato soup is often a no-no for low carbers. If you can fin qan onion soup with a non-tomato base, that would be good....

IIRC onions are fairly high carb.

Broccoli soup is also very good with melted cheese. Also cauliflower...

yeah I would also go for the french onion soup...I can post a recipe I have if your interested....I dont see putting cheese ontop of a veg soup but I guess you could!

this one's from START FRESH, no carbs, pure vegetable.

1 med. onion,diced
2 med. unpeeled zucchini , diced
3 cups veg. soup broth or water
salt, curry powder,ground ginger

saute' onion in minimal canola/olive oil for 3 minutes
add zucchini, saute' additional 5 minutes
add broth, bring to a boil
add above spices according to personal taste
cook on low-med flame for 15 min
let cool 15 min
blend (best with handheld stick blender)
now add cheese

NOTE: recipe is carb-free, but adding the cheese is adding fat, so for the rest of the year, do w/o the cheese.

Dainty Diva and HooRyou, just be aware that ALL vegetables have carbs - some more than others. Tomatoes, onions, pumpkin are quite high in carbs. People on low carb diets eat this stuff very sparingly. I know about this having done Atkins in the past. Carbs doesn't mean bread and pasta. Every vegetable and fruit has carbs.

HooRyou - you may want to serve nuts like cashews and macademias. They are high in fat but very low in carbs. (and high in $$$)

I'm wondering if hooryou meant no-carb as in no-starch. otherwise, is there such a soup as no carb, if all veg have some carbs at least?

This list tell how many net carbs per veggie. Many of the posters in this thread have not given such accurate info.

I always put shredded cheese on tops of the following soups- broccolli, onion, caulflower, tomatoe/spinach

If you are making for someone on a low cab diet I would go with the brocolli, cauliflower, or maybe make a spinach soup- avoid vegetables like onion and potatoes

Sorry to be vague, not being a low carber myself I didn't realize there were somany things to thiink about. The guest does eat all non-starchy vegetables, even onions, but not starches such as beans, potatoes, sweet potatoes, etc.

Does anyone have an onion soup that will fit the bill? Preferably wihtout soup powder since we never have any in the house.

"onion soup"

4 TBS butter or marg(trans fat free)
3-5 large circle sliced onions
2 pints water
sugar (splenda), salt
1-2 TBS flour
2 bay leaves

heat the butter
saute' onions on low flame until gold-brown in color, about 1 1/2 hrs
dissolve flour in water, add to onions
season
bring to 2nd boil, cook for nother half hour
adjust flour for consistency and spices to taste
ENJOY!
(this recipe has traces of starch, or else the soup will be very watery. it pays to buy a bottle of ONION SOUP MIX and add 2-3TBS- it makes a HUGE diff in flavor)

I'd use a French onion soup recipe that calls for Sherry, it gives it a very nice flavor - and is usually used in most French onion soups.

For Shavuos I made the french onion soup from Quick and Kosher- the guests alomost finished the whole pot!!! I put some bread croutons and hot soup and the cheese melted by itself, in the plate.
