If my daughter has her school email on my phone. Can the school see my browser history?
Her email is open on the gmail app.

Depends on the system. With my dd's, also through gmail, if she's logged in they can. So she logs in and out as needed.

Whoa, did I understand right, so her email is open on ur phone, and the school sees ur history through her email?? Am I understanding correctly? How would this work??

What OS is it? You should be able to see it in your browser settings.

If I’m signed into Google and search on my phone, my search history will come up if I sign into Google on my laptop.

What's the main account on your phone? If using Google to search, it'll be on that account.

But, barring some specialized system that I don't know the school has, even if it's the only account on a device, the school cannot see search history. They would need to change the password of the account, login as her with the new password, look through it, before giving her access back, and that wouldn't happen without her knowing. (I'm very familiar with Google Workspace and Workspace for Education, I have superadmin roles on both.)

Operating system.

If you're using Safari, I think that means you're using iOS and are probably logged in with your Apple account.
