Genuinely wondering, based on other threads it seems like a great job for a father. Of course if someone isn't cut out for it they shouldn't do it, but there are tons of guys who would be amazing Rebbeim but work instead, why?

Because unless your heart is consumed with teaching Torah to the next generation it is a sucky job.
The principal hates on you, the parents are impossible, and taking care of kids' needs physically, emotionally, and spiritually, is a huge responsibility.

I could say the same thing about Morahs…every time a thread about Morahs is opened there comes the inevitable comparison and people hate on it. If someone is so jealous of a Morahs hours compared to the pay, come join my school, we are desperate for teachers:)

My husband is in yeshiva administration.. They don't put in ads when a slot is available. They find the rebbi they want. It's coveted. Happens to be they pay relatively decently and do chasdei lev and yt checks and give raises....

I have no idea where you live, but I do know where you don't live. Where I live there are tons of applicants for every Rebbe job, there's a lot of competition as everybody wants to be a Rebbe.

This. DH is dying for a rebbi job. its not easy to get one.

Uh. They do look to be a rebbi. Thats practically every man who spent a decent time learning's first choice. Thats why its incredibly hard to find a rebbi job because its so competitive. (Except for the most undesirable locations or school situations).
Plenty of men I know spent time looking for a rebbi job, maybe even took a stint as an english rebbi or camp rebbi before going into whatever they went into.
They sometimes also realize as they do these stints that they arent as good at this job as they would gave hoped.

There isn't a shortage of melamdim. Being a melamid or maggid shier is a great job and it is respected. Being an English rebbe is different, so if you're referring to that then there is probably a shortage because it is not respected.
There is a shortage of teachers because the pay isn't great and the parents and kids are out of control.
I sub as a hobby. I don't take money so I don't feel tied down. I recently subbed a class that behaved in a manner I could not have expected in my wildest dreams. I think that 75% of the class needed two petch. When I came out, the principal told me that she can't get over how well the class went and asked if I would replace their regular teacher. I'm not interested in teaching, so I said no. But here you have a high school principal asking a sub mid year to become a permanent teacher because she's stuck with whatever teacher she can find and kids who are out of control.

It's great if it's your calling. You're working with neshamos. And yes teaching chol in a frum way is a huge mitzva. But teacher, nurse, anything with humans needs to be a calling.
