My two staples are Chinese spaghetti salad with sesame seeds and scallions, and sugar/oil/soy sauce dressing. And purple cabbage salad with mandarin oranges, pecans, sesame seeds, and sweet vinegar dressing.

Dairy: Spring salad mix, sliced apples, craisins, honey pecans, crumbled feta. Topped with Brianna’s vinaigrette or make your own dressing two parts oil, one part vinegar, 1/2 T mustard, 1/2 T apple cider or maple syrup, salt, pepper, garlic powder, shake of thyme . Whisk and dress at last minute.
Pareve or optional fleishig: arugula, diced cucumber, quartered grape tomatoes, can of chickpeas, chopped dill, handful of chopped almonds or walnuts, chopped peppers, 1.5 cups of any cooked grain or small pasta (farro, rice, couscous, orzo), optional protein: top with two cooked, diced hard boiled eggs or flaked salmon or tuna, diced cooked chicken or steak. Dress with above dressing or dressing of your choice. This is a great salad for using up leftovers and works well for work lunch packed with a frozen water bottle !

Nish nosh salad

Any lettuce based salad with a mix of whatever veg you have on hand, avocado, some crunch (I like pretzel thins) and honey mustard dressing.

Taco salad:

Lettuce
Tomatoes
Cucumbers
Red onion
Black beans
Corn

Dressing (right before serving): mix of mayonnaise and salsa. Sprinkle corn chips on top.

I’ve never made it dairy but I imagine it would be good with shredded cheese sprinkled in too.

Asian cabbage salad:
1 cabbage shredded
1 head scallions chopped
Toasted almond slices
Toasted sesame seeds
Peanuts

Dressing:
1/4 cup of each: oil, brown sugar, soy sauce, white vinegar
1 tbsp peanut butter
1 tsp sesame oil

Mix everything together and dress at least a couple hours in advance.

Greens of your choice
Red onion
Roasted sweet potatoes (slice thinly into half circles or strips, sprinkle with salt, pepper and a little paprika, drizzle with oil and roast in oven until soft)
BBQ (or plain) corn nuts
Vegi toss honey Dijon dressing

And this awesome salad:
romaine
sundried tomatoes, cut in strips
Red onion, half rings
Feta cheese, crumbled
White mushrooms, sliced
Avocado, cubed

Dressing:
3/4 c oil
Juice 1 lemon
1/2 c red wine vinegar
3 T dried parsley
1/2 tsp dried oregano
1/2 tsp dried basil
2 frozen garlic cubes
3/4 tsp salt
1/4 tsp black pepper

for the dressing is it vinegar and then apple cider vinegar or just one of the vinegars? Thanks
