Chocolate Zucchini Bread
Recipe #220 | 1½ hours | 25 min prep .
SERVES 10 , 2 loaves (change servings and units)


Ingredients
3 eggs
1 cup vegetable oil
2 cups sugar
1 tablespoon vanilla extract
2 cups zucchini, peeled, shredded (about 1 medium)
2 1/2 cups all-purpose flour
1/2 cup baking cocoa
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon, ground
1/4 teaspoon baking powder

Directions
1 In a mixing bowl, beat eggs, oil, sugar and vanilla.
2 Stir in zucchini.
3 Combine dry ingredients; add to zucchini mixture and mix well.
4 Pour into two greased 8x4x3-inch loaf pans.
5 Bake at 350°F for 1 hour or until bread tests done. Makes 2 loaves.

I used a cup of applesauce instead of oil, white whole wheat flour instead of regular flour, and half splenda.

I just made it, definitely more of a cake. I also think that it would probably taste fine with more zucchini than the recipe called for.

I used one med-large zucchini and next time will try with two.

It basically tastes like chocolate cake - which is fine with me! I needed to get rid of excess zucchinis and DH hates them, so I need to hide them in things.

Yeah, it looks like one way to sneak some vegetables into the kids.

Can you see any "pieces" of zucchini in the cake? (I can hear it now - "eeeeewwwww, pieces").

Apple shreds - eeeeewwwwwwww. I guess you don't have slightly bigger children.

Chocolate and zucchini sounds like a very odd combination - but I do like both very much so I might just have to give it a try. Thank you for posting this. Smile

Zucchini makes the cake very moist. It does not give it a zucchini flavor. I make a similar recipe quite often.

I froze some shredded zucchini I had left from last time I baked, anyone know if you can use that and have success when baking a zucchini cake?

Just made this for y"t and it came out good, just not sweet at all. Maybe because I put in a little less sugar Rolling Eyes .

meatloaf (mixed shredded zuke into the meatloaf and also added bread so it wouldn't be watery)
