Why is so accepted that so many frum stores and pop ups (it's especially true with wig pop ups but many other stores too) only take cash? Tax evasion is completely assur. Why does everyone look the other way.

How in the world did you get to tax evasion? Was everyone engaged in tax evasion until 1990?
Life is simpler with cash, and if they're selling clothing, often times there's no sales tax to begin with

The xxx is one example of a place that only takes cash. No zelle. And I’m not just talking about sales tax (which btw should be charged on sheitels) but mostly income tax. If they make a sale they have to be reporting that income.

I thought this was my complaint, I very often do not have cash on me so I find the all cash sales annoying, many times I don't take part in them because of it.
I thought that is what you are complaining about.

Let’s not pick on specific companies, especially not one that’s doing groundbreaking and very necessary work making affordable wigs an option to people. I encourage you to think about deleting the name of the company from your post.

When people are getting rid of stock with sales, they are trying to turn their inventory into cash so they can restock. They're not interesting in waiting for payments or deducting processing fees.
I understand the cash and carry mentality of a good sale. (But maybe I'm ok with it because I hardly ever go to sales, I don't like the crush of people or the pressure.)

A lot of the cash only sales I've seen will allow you to pay by credit card if you pay the 3 to 5% credit card charge. I always assumed the idea just was that being the prices were lower than usual, they couldn't afford to(or didn't want to) also pay credit card processing fee.

I’m an accountant, and I happen to have 2 pretty big wig companies as clients. Both of them, when you buy a wig for $xxxx, that amount includes sales tax. The sales price is inclusive, and they actually pay a pretty penny in sales tax. Just adding my 2 cents 🤷♀️. Lots
Of cash gets deposited as well. I’m not naïve. They are not depositing it all (my assumption), but they are not asking for cash for tax evasion purposes. That’s a stretch. It’s due to cc fees on a $3k product being high + checks bouncing issues which is unfortunately common + for Zelle, they need someone to constantly check each transaction to make sure it came through, and it’s often too complicated for a pop up shop.

Out business account can’t do zelle so it’s either cash checks or cc, cash is the least amount of fees involved. For a wig sale a lot of it may be going straight to the manufacturer so no income taxes due for that anyways.
