I forgot to feed starter yesterday. Can I still make sourdough today?
Please advise.

ChantzyW explains how to make sourdough in 24 hours on Instagram. She uses a heating pad to speed up the rising process; if you don't have one you can probably turn on your oven and leave the dough on the stovetop instead.

It’s possible to bake bread on a time crunch, but in my experience it wont be the same. The key to good bread is a strong starter. If youre using a weak starter either because it hasn’t been fed in weeks or because it didn’t have ample time to ferment, your dough wont rise the same and it might lack in texture.
I wonder if someone near can give you some starter. I see such requests on my local whatsapp chats all the time and personally, I always have extra when baking

I do it. I’ve even made starter when feeding the dough Friday morning
Feed the starter now
Put in a warm place in the house
Should be ready in around 4 hours
Make your dough
Skip the fridge rise and do it all on the counter
(If I wanted to bake next day, I would do overnight in the fridge)

Definitely rises, comes out delicious. If the rise is shorter and skip the fridge, the sour flavor is less pronounced. But the bread is nice and fluffy.

This happened to me last week so I set a Thursday morning alarm from now on to feed my starter.
