Starches good for celiac

Need some ideas for starch side for supper every day
So far have potatoes, rice , gf pasta
Anything else out there that is not bread tacos or the above? That I could use other days

I do potatoes, fries, sweet potato, corn, quinoa, rice, gf pasta. I just came across gf couscous in the store this week which I'm going to try. Also konjac noodles. I've done in the past zoodles, where I make spaghetti using squash or zucchini.
I don't know if this is for an adult or a child. As an adult with celiac I'm willing to be more easygoing about what foods I eat, and can serve myself the same starch more than once a week. I also serve myself more protein and veg, which I anyway think is healthier.
Look at what your local store has in the gluten free section. I find they seem to have more and more stuff that is gf.

Roasted butternut squash, roasted kobocha squash, roasted delicata squash, spaghetti squash, purple yams, carrot fries, chickpeas, lima beans, lima bean mash, millet, buckwheat, wild rice, amaranth, teff, corn on the cob, lentils

What is konjac noodles ?
How would I make buckwheat ?

There are rice noodles you can make nice Chinese stirfrys with.
You can experiment with rice paper and fillings
And there are soft corn tortillas that are delicious but only if you toast them first. Put them on your stovetop over an open fire, flip with tong so each side has some blackened bits. Put on a plate and cover with a towel or paper towel to keep moist and stack them up as you toast them. The texture and flavor are so much better
Also you can toast them in a toaster with cheese and too with refried beans and toppings for tostadas

Konjac noodles are illegal in many countries cuz the body can not digest them
