Can I just select the "gift receipt " email to go to my own email address, and then just forward them that email later? Will the link to return the item work if it's from a different email address?

If you order it to yourself with the gift option there will be a little return slip included in the package. Tape that to the item when you gift wrap it. They cannot return it from their own email address without that little slip, unless you enter their email as the gift recipient when you're purchasing.
