Pretty sure the only reliable way to get to Israel now is thru Elal, which means paying the price...
Though I'll be happy to hear someone disagreeing with me!

I don't know where you are flying from, but I booked a ticket about 6 weeks ago to fly in a few week via elal and it was in the $1400 range. Siblings are flying from Newark and it was $1300 something.
The closer you book the more expensive

I use skyscanner - and now you do not need to shell out the money for only elal direct
You can go to any major european city and do a long stopover ( I do 24 hours) take, a hotel and then fly elal, arkia, or israair ( they are israeli low cost airlines) and they are just as reliable as elal.
Or use another airline with a stopover - when flew the day after the ballistic missiles with ITA and they did not cancel. The tickets are refundable if something does happen....

Just a warning that Arkia is not reliable at all. They cancel flights on a whim, for no particular reason, and just leave you hanging. Unless you're okay waiting a day or two for a connecting flight, I'd steer clear of them.
