This is my oldest girl and my dd is in a newish school so we haven’t heard one word about the seminary process etc. if someone can fill me in with step by step how the process works would be super helpful.
Also my dd is on low dose meds for mood swings/ slight depression. She is doing amazing etc and will probably be off by the time she goes, but I’m wondering if this would be something that they ask on the application. Also will she not get in because of it? She is extremely private about this and not a soul knows about it. ( not her school or camp or siblings etc) she will never agree to put it on her application if they ask.

No problem with meds generally. There is a common app for seminaries of YU type seminaries. I think Dec 1 is usual deadline. Sometime in January for BY type seminaries.

The BY applications are due in December this year but later in December than the common app seminaries

My daughter's school has a policy that they do not share any mental health history during the application process. Not to conceal anything, but in order that the million people who see the application are not privy to something they don't need to know. I don't know the exact psak, but do know the information must be shared, but not with the application. You should definitely speak to your school/rav and see how this is normally handled. I know some seminaries are know for handling these situations beautifully, and others, not as much.
