I went to gourmet glatt today and bought a bunch of stuff. I'm so done. There will be plenty of food and everyone will be fine. So much better to enjoy my day than be a slave to my stove!

I cooked double some stuff rosh hashana and first days so had to make very little
I’ve been doing this for many years and it’s a real help
I also do this with some shabbos food so I don’t have to make everything fresh every week

I'm using base from freezer. For 2nd days all I did was

Last night
-sautéed onions, peppers for frozen orzo
-roasted green beans, asparagus, yams
-boiled baby red potatoes

Today
-baked side of salmon
-broiled London broil
-slow baked corned beef and pastrami

I have last minute guests. If not for that I would have skipped the salmon, corned beef, sautéed veggies and baby potatoes, because I tried to cook triple and freeze initially and hadn't planned to do much now.

I also did that, but used almost all of it for the first days of Sukkos.

At least I cook on Yom Tov, I don't have to stress too much.

I have the opposite. I ended up using way less than I thought, so now I have a lot more stock in freezer. Btw this always happens by me, I always prepare too much food. How much can you really eat?

In any case op, I was in evergreen yesterday, the store was mobbed with people buying ready food. Sukkas really is a very very very long yom tov.

I barely made anything for the whole succos. in eleul I make doubles of side dishes and main dishes so I mainly defrosted.
