Is there a recipe that involves white wine, onions, and meat plus any other ingredients? I have here mock cheek meat and club steak. I would like the sauce to have a gravy consistency but yet soft and melt in the mouth. Am I asking for a unicorn?

You can slice lots of onions, place the club steaks on the sliced onion with soms garlic cloves. Sprinkle salt n pepper & add 1/2 cup white wine. Cover well & bake on 350 for 2.5-3 hours.

Thank you! Do I sear the meat first? And will it come out soft?

You don't need to sear the meat first. It comes out soft. I like 325 for 3 hours (and like to rub the meat with added oil).

Make a Marsala type gravy. Sauté onions and mushrooms in olive oil. Add white wine, let it reduce till almost boiled out. Add chicken broth (or chicken soup mix plus water). Let it simmer.

If you want gravy to be a little thicker, dilute a tablespoon of corn or potato starch in cold water. Add to meat sauce and boil until thickened while mixing to prevent lumps.
