Hi! I have a few roasts in my freezer; chuck roast, rib and french roast. Can I cook any of themike London broil?

You want to cook to rare? The rib roast would work for that.

Can I cut any of my roasts to make London broil? I have shoulder roast, chuck roast, minute roast

Minute roast can be split down the sinew to make two split minute roasts aka London broil.
I'm not sure how it's done.

The shoulder roast and French roast can be made rare/medium, but since they are much thicker and bigger than London broil, the method/length of time is different than London broil.

Chuck generally should be made low and slow until very tender and fully well done.

I don't know. What if you cut it the wrong way?
Cutting it will shorten the cooking time, but could potentially impact the flavor and tenderness.
I would only split the minute roast and try to use my fingers to try to pry the top and bottom apart at that sinew line, to guide me on where to cut.
