There was once a recipe posted here with frozen veg ( not broccoli or cauliflower. Corn, carrots, zucchini I think) that you mix with consomme and other spices and oil maybe and bake. Any idea what I am talking about?

Any other easy ideas for hot veg?

I've done plain mixed vegetables and served it fresh out of the oven and it's delicious. Kind of like oven steamed and well seasoned.

1 (16 oz.) bag frozen mixed vegetables (carrots, peas, green beans, corn, lima beans)
olive oil
salt

Pour frozen veggies into a small pan. Drizzle with olive oil. Season with salt to taste. (Be generous - taste the frozen veggies as you go.)
Bake tightly covered until cooked through, about 40 minutes.

Not of it starts off frozen (don't defrost beforehand) and it gets eaten right away.
