I don't know how to make my oven go on during Yom Tov, so a lot of my go-tos (roasted veggies, baked fish, etc) don't work. So what are some recipes people with a stove top?

You can make fish on stove top if it's gefilta you can put in a pot with water and carrots, if it's fried fish you just can just fry it.
Roast can be made on a stove top with a pot of water, spices, potatoes, onions, carrots, garlic.
Saucy chicken - you can either mix together honey, tomatoe sauce, lemon juice pour over chicken, you can cut up some veggies and put on bottom of 9x13 and put on low fire on stove and cook it stove top it comes out yummy.
I have done corn beef on stove top I cut up strips and fry it with onions or any other type of deli meat.
Burgers, meatballs chicken cutlets can all be done in a frying pan. Just add a little oil Sautee onions and cook away!

Most things can be made on the stove. Instead of roasted veggies you can stir fry in a bit of oil.

Two color zucchini sautéed just until crisp tender (garlic, basil, s&p), and a handful of halved cherry tomatoes added for the last 1 minute.
Sauté a bag of broccoli with garlic and coarse salt.
Add green beans to hot pan and stir until just starting to blister 5 min. Add garlic and stir 30 seconds. Add 2 spoons water and cook 2 more min.
