I happen to be an amazing last minute chef- I do it all Erev and fancy things.
(I take that day off of work and full time before so it's the best time for me)

Ok I'm happy to hear that people aren't feeling bad. It sounded like people felt pressured that they didn't make anything yet.

I happen to also be a phenomenal last minute chef. I work well under pressure and I love to patchke in the kitchen. Right now, with 2 of my kids being ND, I know that I won't be able to do that. The only way I can get thru yt with my sanity is if all the cooking is done in advance. Hashem is really pushing me here to learn how to be more organized and to be ok with keeping things more simple.

I really hope this thread isn't making anyone feel anxious. We'll all get there and it's ok if everything isn't glamorous or isn't homemade.

I am really disorganized, but I’m working right up to erev YT and I’m very stressed. So I have been cooking and baking up a storm. I have no room in my freezer.
Challos…lots. And two bags of dough
Meat soup/split pea soup x2
Butternut squash soup x2
Chicken soup
Cinnamon buns
Peanut butter cookies
Ice cream to roll in topping and peanut butter sauce
Roast
Corn beef x2
Meatballs x2
Potato kugels x2
Broccoli and mushroom pie x2
Apple kugel x2
Cranberry apply kugel
Sponge cake with strawb sauce and cream
Brownies
Lemon cream pies x2
Chicken schnitzel x2
I still have to make a pepper steak, lokshen kugels, broccoli kugel, and mashed potatoes.
I’m exhausted. I’m hoping to have some of this left over for second days.
And now that I did all that…..I will have a really difficult time figuring out what to serve at which meal. Being disorganized and probably ADD is the pits.

If your recipe for Blueberry muffins is easy and healthy I would love if you can share it!!

I'm not the poster you quoted, but I love the muffin recipe on the back of the Good and Gather (Target brand) whole wheat flour bag. I don't have it by me now, I'm sorry.
