ISO cookie recipes that don't have chocolate chips, cocoa or cinnamon. Prefer not to use margarine either.

Cookie Twists
Ingredients:
eggs - 3
sugar - 1 cup
oil - 3/4 cup
flour - 3 cups
baking powder - 2 tsp
orange juice - 2 tsp

You can skip - Topping:
sugar - 1/2 cup
cinnamon - 1 tbsp

Instructions:
Preheat oven to 375F. Place eggs, sugar, and oil in a food processor fitted with the steel blade and process until combined. Add flour, baking powder, and orange juice and pulse until just combined and dough forms.

In a small bowl, combine the sugar and cinnamon for the topping. Using about 1 Tbsp of dough for each cookie, roll into a long rope and dip in the sugar mixture. Fold in half and twist. Place in a lined baking sheet and bake until bottoms are just starting to brown, about 12–14 minutes.

Almond Sugar Cookies

2 and 1/4 cups (281g) all-purpose flour (spoon & leveled)
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup (170g) unsalted butter, softened to room temperature
3/4 cup (150g) granulated sugar
1 large egg, at room temperature
2 teaspoons pure vanilla extract
1/4 or 1/2 teaspoon almond extract

Whisk the flour, baking powder, and salt together in a medium bowl. Set aside.
In a large bowl using a hand mixer or a stand mixer fitted with a paddle attachment, beat the butter and sugar
together on high speed until completely smooth and creamy, about 2 minutes. Add the egg, vanilla, and almond extract and beat on high speed until combined, about 1 minute. Scrape down the sides and up the bottom of the bowl and beat again as needed to combine.

Add the dry ingredients to the wet ingredients and mix on low until combined. Dough will be relatively soft. If the dough seems too soft and sticky for rolling, add 1 Tablespoon more flour.

Cover with plastic wrap or aluminum foil, then refrigerate for at least 1-2 hours and
up to 2 days.

Once chilled, preheat oven to 350°F (177°C). Line 2-3 large baking sheets with parchment paper or silicone baking mats. Carefully remove the top dough piece from the refrigerator. If it’s sticking to the bottom, run your hand under it to help remove it– see me do this in the video above. Using a cookie cutter, cut the dough into shapes. Bake for 11-12 minutes or until lightly browned around the edges.

You can skip the cinnamon in these cookies, they'll still be delicious because they have brown sugar.

Coffee Cake Cookies
Crumb Topping
½ cup butter, softened
⅓ cup brown sugar
⅓ cup granulated sugar
1 tsp cinnamon
½ tsp salt
1⅔ cup flour

Cookies
10 Tbsp butter
⅓ cup shortening
1 cup light brown sugar
½ cup granulated sugar
1½ tsp cinnamon
2 eggs
2 tsp vanilla
2 tsp baking powder
1 tsp salt
3⅓ cup flour

Preheat oven to 350°. Line cookie sheet with parchment paper or silicone liner. Set aside.
Crumb Topping - Mix all the crumb ingredients together in a medium bowl and cut together with a pastry cutter or a fork until evenly mixed. Refrigerate while making cookie dough.
Cookies - Mix together butter, shortening and both sugars for 1-2 minutes on medium speed, until combined and smooth. Add in cinnamon, eggs and vanilla and continue mixing until evenly combined. Turn mixer to low and mix in baking powder, salt and flour, mixing until dough comes together evenly.
Scoop cookies out, using a cookie scoop or spoon (about 3 Tablespoons) and place on lined cookie sheet. If using a spoon, form the dough into rounded balls.
Make an indentation in the center of the cookie dough. Scoop at least 1 Tablespoon of Crumb Topping into the center of the dough pressing lightly to stick. I added as much as I could get in there!
Bake cookies for 9-10 minutes, or until edges start to get golden.
Remove from oven and allow to cool for 3 minutes on cookie sheet, then transferring to a wire rack to finish cooling.

You can skip the cinnamon

Oatmeal Cookies or Bars
1 cup all-purpose flour
1/2 cup sugar
1/2 cup brown sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly ground nutmeg
1 teaspoon vanilla extract
1 large egg
1/2 cup butter, melted and cooled
2 cups quick-cooking oats ( not instant)
1 1/2 cups raisins

Preheat oven to 350°F Line an 8×8-inch baking pan with parchment paper (optional, but aids in getting
cookies out of pan).
Whisk together flour, sugar, brown sugar, baking soda, salt and spices in a large bowl.
Make a well in the center of the flour mixture and stir in vanilla, egg and melted butter until smooth. Stir in oats
and raisins until they are evenly distributed.
Pour dough into prepared pan and spread into a even layer with a spatula or your fingers. Bake for 22-26
minutes, or until bars are set and the center no longer looks wet. Edges will be golden brown. Cool pan on a
wire rack before slicing. Cut into rectangular bars to serve.

White Chocolate Cranberry Cookies

1/2 cup unsalted butter, softened
1/2 cup packed light brown sugar
1/2 cup granulated sugar
1 tablespoon vanilla extract
1 large egg
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking soda
1 cup dried cranberries, chopped
3/4 cup white chocolate chips
3/4 cup macadamia nuts, chopped

Preheat the oven to 350 degrees F. Line 2 baking sheet with parchment paper. With an electric mixer, cream the butter and both sugars together until smooth. Add the vanilla and egg, mixing well. Sift together the flour and baking soda. Spoon the flour mixture gradually into the creamed sugar mixture. Stir in the cranberries, white chocolate chips and macadamia nuts. Drop by heaping spoonfuls, about 2 tablespoons, onto the prepared baking sheets, 2 inches apart. Bake one sheet at a time until lightly golden on top and the edges are set, 12 to 15 minutes. Cool on the sheet about 5 minutes, and then transfer to a wire rack to cool completely.

I have a lemon cookie recipe but it has margarine.

Mini Sprinkle Cookies - Ami
1/2 cup oil
1/2 cup light brown sugar, packed
1/4 cup granulated sugar
1 egg
2 teaspoons vanilla extract
1 1/2 cups packed flour
2 teaspoons cornstarch
3/4 teaspoon baking soda
pinch salt
scant 1/2 cup sprinkles

Whisk oil and sugars until smooth. Add egg and vanilla extract and continuing whisking.
Add flour, cornstarch, baking soda and salt and mix well until just combined. Mix in sprinkles last.
Form into tiny balls. Arrange on 2 lined baking sheets. Bake 6-8 minutes, until tops just begin to crack and turn golden.
Allow cookies to firm up on sheets for a few minutes before removing.

Make a regular batch of chocolate chip cookies minus the chocolate chips. Other add in options could be potato chips, peanut butter chips, craisens, nuts, pretzels, oatmeal, sprinkles. Would you do cocoa nibs instead of chocolate chips?

You can also add in fun extracts to the dough like maple, orange, strawberry etc. Do a parave whip topping.
