Someone posted a great idea to buy these bigger mousse cups and serve desserts in that for yom tov. so I have the cups and made strawberry shortcake.
what other pretty easy ideas are there? would really appreciate actual recipes rather than just listing ideas please. thanks!

Fresh and easy cookbook has a frozen blueberry crisp recipe.
You layer storebought ice cream . And homemade blueberry sauce and top with a layer of crumble.

Lotus ice cream.
Whip a 16 oz whip topping, add 6 eggs slowly, then add 1 c sugar, 1 c confectioners sugar, 2 T vanilla sugar. Melt the (16 oz) lotus jar in microwave or in hot water and mix. You can mix fully or let it be marbleized.
You can freeze in containers and scoop to serve or prepare in little cups with lotus cookie crumbs (or not).
Same idea with store bought ice cream such as Abe's. Add cookie crumbs, sprinklers, peanut butter etc for razzle ice cream.
