How long before meal should I start warming up food on the hot plate ?

It depends.
For me, since I’m usually warming up just a few pans, a couple hours is sufficient and I watch to make sure nothing burns/dries out.
If you are warming up soup or double-decker layers of 9x13s you’d need longer.
