I need to make my challah today.
Do you think it is better to bake it today and freeze it already baked (or might it get dry and freeze burned)
Or
Freeze it before it rises and bake each one fresh YT morning.
(Concerned it might not rise properly.

I would say bake it today, takes away the stress if it doesn't work out when you put it in raw.
I always bake and freeze. I wrap it in a zip lock challah bag and it never gets freezer burn. It's also good to rebake it on Erev Yom Tov/Shabbos, like that it gets crispier on the outside, you get that heaven smell in the house and it's super delicious.

I would freeze after baking so it will be equally fresh all yom tov. If I defrost and bake erev yom tov it will be super fresh the first night and then meh the rest of yt. Also I'll need my oven available for other things erev yt. If you freeze it fresh and warm up on blech before each meal it's delicious.

I once tried freezing first and it was a disaster. I'm not sure how people do it.

I've tried it out previously and it was pretty good. The dough rose and I took challah and once I braided it, wrapped it well and put into freezer. Friday morning I took it out of the bag and let it come to room temp, a good few hours. Egged it and baked it and it was good.
I wanna do that today. Make a dough, take challah, shape it and freeze it to bake erev. Question is, can I do that? If I take challah, must it be baked right away?
Eta: I only made one challah to put in freezer and baked the rest
I want to make a whole batch today and freeze all those pans.
