I am due Sukkos time and if I have the baby before Sukkos, will likely go to my parents for the entire Sukkos. OTOH if I don't have the baby yet we will be making Sukkos at home for the first time.
I'm trying to figure out at what point is it worth it to lay out the cost and purchase a sukkah, and at what point it makes sense to build it.
Day after YK? (Wondering if YK will put me into labor...)

Get an inexpensive one that’s easy to assemble

Can you buy a popup sukkah now? They usually end up being helpful even though at some point you'd need a regular one. This way you don't have to feel pressured about doing anything last minute.

Popup sukkah is a thought. Do they make ones that would fit 3 people?

I would buy whatever succa you where planning on purchasing and put it up motzai yk. Btw hubby should be doing the building not pregnant mama. If your home you'll enjoy it and be prepared if your not you'll laugh about it. Got s mitzva for building it. Will have it because sound like if would have been home this year willbe home in the future.
I wouldn't spend money on a pop up unless that's what you where planning on buying for long term anyway

Good point that it doesn't really matter when we purchase it since we'll iyH use it in the future.
Though I think my DH would prefer real homemade wood sukkah that would be hard to put up himself at the last minute

The pop up sukkahs are not recommended for regular use.
Some are really flimsily and may not be halachicly great. Ask about it.
There are better ones. But the simple small canvas sukkahs are similar price. Better stability. And more pleasant to sit in.

I would look at a canvas succah. It's poles and canvas which is pretty easy to assemble and easy to store when down.

What about cooking? I would just plan to go to your parents.

Why wouldn't you go to your parents either way? What happens if you give birth 1 day into sukkos?

My parents live 2 hours away, they're too far from my hospital.
I'm cooking what I can now and freezing, I figure that either we'll eat the food on Sukkos or we'll have more food for when I'm postpartum.

I was due erev yk. We didn’t build a sukka, ate all meals at my parents house (I lived a few minutes away). My dh wouldn’t have slept in the sukka because I I was overdue and needed him at home. I ended up giving birth a few days after sukkos but it was still easier than have to build a sukka, even a pop up one takes time.
