Let them pour in the ingredients that I measure out. Let them line the time with cupcake liners. Let the 6 year old turn on the oven. Give them a kids knife and cutting board and let them chop away at some apples that they can also peel. Include them in the baking instead of trying to distract them.

I can't bake when kids are around. It's dangerous for my state of mind. Baking with them for fun is a different story, just not when I really need to get things done.
Can you give them playdough to be occupied at the kitchen table so that you can keep an eye on them? and have them make make believe food for yom tov?

Cooking is easier, they can peel your vegetables.

Another vote for baking with them. I find they only have patience for one thing and then wander off to play while I do the rest

Let them help. Or else set up coloring on the table in the kitchen with a story to listen to.

You really have to know yourself what type you are and what your patience level is. Like if a kid starts pouring and I mean pouring in salt randomly into your batter for a sweet cake, or if they by mistake spill out the whole bag of flour, it can get very stressful and tense.
If you are chilled and don't mind if a kid sneezes into your baking pan and do whatever else kids do, then you will be fine. I've baked with my kids plenty for fun and it was very enjoyable for both of us. But I find that when I really want to accomplish and knock things off my list, it's not such a good idea.
Try it out and do what works for you! Happy cooking and baking!

Your options are to do everything after bedtime or let them help and it will go slower and be messier.

Or buy instead of bake, do quick one bowl recipes, cook on Yom tov or make easy dishes.

If I’m making cookies or challah ect I’ll allow them to make their own.

Most of the people already have logical advice but here’s what I do as I have children the same age.
I let them watch. Toveedo 🙌 but I do call them up one by one to do one job I.e break egg, mix , mash, egg wash etc. they could also stand on a stool around the island only if they don’t touch.
I give them a tiny piece of dough to play with (that’ll keep them busy for a while).
